It’s going to be a week of flavorful adventures, from quick weeknight wins to a beautiful Shabbat spread. Let’s take a look!

Sunday: Pizza Night!

  • Details: We’ll kick off the week with a classic pizza night. It’s always a crowd-pleaser and a great way to relax after a busy weekend.

Monday: Pad Thai with a Healthy Twist

  • Details: We’ll try a healthier Pad Thai using whole wheat noodles and tofu. I’m looking forward to sneaking in some extra nutrients with this delicious dish.
  • Pro-Tip: I’ll be sure to press the tofu ahead of time for a firmer texture.

Tuesday: Fish Tacos & Instant Pot Mexican Rice

  • Details: Taco Tuesday will get a seafood upgrade! We’ll be enjoying flaky fish tacos with flavorful Mexican rice made effortlessly in the Instant Pot.
  • Instant Pot Tip: The Instant Pot will be a game-changer for rice! I’m expecting perfectly cooked rice every time.

Wednesday: Meat Leftovers (Real Life Alert!)

  • Details: Wednesday looks like it’ll be a whirlwind of activities, so we’ll be relying on meat and pareve leftovers. It won’t be glamorous, but it will be practical. We’ll embrace the chaos and make it work.
  • Real Life Note: I’m planning to use up leftovers to reduce food waste and save time.

Thursday: Vegetarian Enchilada Casserole

  • Details: We’ll enjoy a comforting vegetarian enchilada casserole layered with cheese, leftover Mexican rice, refried beans (Instant Pot!), and spinach. It will be a hearty and satisfying meal.
  • Make-Ahead Tip: I’ll prep the enchilada sauce earlier in the week to save time on Thursday.

Friday: Shabbat Shalom!

  • Details: Next week’s Shabbat dinner will be a beautiful feast:

    • Chicken Nuggets: Always a hit with the kids.
    • Spinach Souffle: A light and airy side dish.
    • Roast Potatoes: Crispy and delicious.

Saturday: Sure, We’ll Bring a Pie!

  • Details: We’re fortunate to be guests for Shabbat lunch this week. I’ll be bringing a homemade strawberry rhubarb pie to share.
  • Baking Note: I’m hoping the pie will be a success! I love the sweet and tart combination of strawberry and rhubarb.
